Cilantro Chili Lime Tacos

So yesterday  I was planning on making this for dinner for my family and friends, but the hubs woke up with the flu :(Instead of yummy shrimp tacos we had chicken broth and soup from a can! But despite not making them yesterday, I thought I would share the recipe. Ill be sure to post a picture later in the week when I do make them. Enjoy :)

Cilantro Chili Lime Tacos w/ Chicken or Shrimp

3 fresh squeezed limes
1 1/2 tsp chili powder
2 tbsp chopped cilantro
1 tsp olive oil
1/4 tsp minced garlic
2 cups fresh mini shrimp
corn tortillas
purple onions
cilantro
slivered carrots
*place all ingredients and let soak at least an hour
*after marinating grill 
*place in corn tortillas and top with chopped purple onions, cilantro and slivered carrots
*serves 4
*enjoy!!!!!!

Transformations!


Today's workout was a killer, but it was awesome!!! I LOVE leg days. They make me feel like I'm one tough cookie & a little BA.  I love doing weights. I have seen lots of results from changing my diet and increasing my cardio workouts, but weights is where I see the definition and tone of my muscles. It's awesome to look back to see where I was and where I am now. I makes me appreciate the journey I have been on and see the benefits of my hard work. I have never posted pictures of my process before, I am super nervous to do this, but you have to do it sometime! I don't have any of in workout clothes. I feel like I see more difference in my every day life photos, especially in my face. But I have began to take pictures every month of me so I can see inch loss more clearly. So I'll post those pictures next time :)

Vegging; Its okay sometimes.

Everyone deserves some girl time and some good vegging, and that is what I did this weekend and it was awesome!!! But when I have a good veg, it makes me excited to cook a good clean meal. Sunday dinner was a delight last night. We had an olive oil rosemary sirloin roast that my hubs grilled to perfection. We enjoyed roasted peppers and fresh pineapple, salad, and avocado bruschetta on the side. Can I just say it was so good. It was so nice to have a tasty dinner and clean meal after a little vegging. It preps me for a new week. I wasn't able to go to the gym at all because of a sick baby and I was also feeling under the weather, but I am ready for it today! I know I'll kill it tonight. Remember its okay to have a little veg. What's important is that it is not a lifestyle, it's just a little fun :)

Lunch; favorite meal of the day!

Breakfast is most people's favorite meal, mine is Lunch! I love salads & wraps, which consist of majority of my lunches. Yesterday I had a smoked turkey wrap on a 90 calorie wrap with mixed greens, peppers, tomato, and the Laughing Cow cheese spread. So yummy. For my sides I had steamed snow peas and fresh strawberries. Ryker had a peanut butter and agave sandwich on whole wheat, which he ate aggressively up, strawberries, broccoli, and grapes. It is so fun sitting down together at the table and talk about what we are eating. Ryker loves asking "why" he is eating this and wants to know if it is "helfy" aka healthy or not :)

My Secret Love!

Let me tell you all a little secret; I LOVE grocery shopping. And i mean I LOOOVVEEEE it, I find it relaxing and creative. I plan most of my meals while I am shopping. There is just something about looking at all the food, and the wheels in my head just start spinning. But enough of how much I love grocery shopping, let me tell you about my favorite stores. I LOVE SPROUTS!!!! It is my favorite place to shop by far. I get all my produce from there.  I love that it is FRESH and CHEAP!!! Wednesday its double coupons, so most of the produce is under $1 a pound. Thursday is student discount day. I completely forgot about that, so that was an awesome surprise when I went yesterday. I normally spend up to $50-$70 for 2 weeks of produce, and I get a TON of produce and variety. I also love HARMONS & TRADER JOES!!!   I love that Harmons has lots of yummy healthy lunches and Trader Joes, well I love that it gives me so many options for variety and organic foods and has the best yummy snacks for myself and Ryker.

2 weeks produce and a little bit of extra for $70!!!!!!

Morning workout routine :)

Easy and quick morning workout 
This is my favorite morning workout that I do before I shower that I found on pintrest.  I love it because it only takes 10 min. I don't always do it everyone morning (sometimes being a mom, you get behind schedule) But i do it at least 3x a week. On days that I don't get to the gym because of work or a sick baby (like this week) I do 3 sets in a row 3x throughout the day.

For my pre-work I enjoyed a mixed berry spinach smoothie (recipe in the recipe section) and a banana with a tbsp of organic peanut butter. Now that I have finished I am eating a delicious bowl of granola with apple slices. So yummy!

At little @ home therapy

Last night I hurried to Walmart after work and was able to pick up one of the last FROZEN!!! I'll have to confess this was something I have been looking forward to getting since I saw the movie months ago.  Due to the nasty cold that's hitting the Haynes residence, I haven't been able to hit the gym or do at home exercise. So this morning I popped FROZEN into the blu-ray player for Ryker, I began my morning yoga. It's been a couple weeks since I've done it. It felt so nice to feel the muscles and mind relax while listening to Ryker sing "Let it Go." Rodney Yee, Indina Menzel, and Kristin Bell sure knows how to relax the soul.

Remedies for our Sore Throats

Sunday the little man woke up with croup and this morning I woke up to a nasty sore throat & head cold. Its going to be one of those extra vitamin C & sore throat spray days. Along with the meds, we had a Tropical vanilla smoothie for breakfast. It was so yummy! Helped cool down our sore throats for a little while.


Tropical Vanilla Smoothie

2 Cups Mixed Berries
1 cup Mango
2 Cups Pineapple Juice
1 Scoop of Vanilla Protein Powder
1/8 Cup Chia Seeds

It's finally here!

So its here. Fine, fit & fresh is finally up and running! I have been busy finishing up the final touches as Ryker & I made breakfast this morning, whole wheat pancakes. ( recipe below )  I still don't have all my recipes up but if you have specific requests please leave comment. Thank you to all you have been a support as I have made this lifestyle change.
