Tandoori Chicken

Tandoori Chicken (The Paleo Cookbook)

4 chicken breasts
1 cup coconut milk
1 TBSP tomato puree
2 tsp minced garlic
2-3 bay leaves, crushed
paprika
curry powder
fresh ground pepper
*score and place chicken in baking dish
*combine coconut milk, puree, garlic, and bay leaves together
*pour over chicken
*bake at 350 for 45 min
*remove sauce from pan
*sprinkle paprika and curry powder over chicken and bake for 10 min
*serve with sauce on the side and season with pepper as desired
*serves 4
